THE ENDING!

After your family has finished the wonderful meal that you have prepared for them on Christmas day, you'll want to end the day with a good tasting dessert. However, by the end of the day, none of us want to spend a lot of time preparing a fancy dessert. So, this week, I'll share a couple of simple and easy cake recipes for your family.

First, however, I'd like to share this short dedication with you <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

DEDICATION!!

This last column before Christmas is dedicated to Grandmas everywhere. You know, that wonderful lady who always had time for us in spite of her busy day. And what a busy day she had. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

Grandma, on a winter's day, milked the cows, and fed them hay, slopped the hogs, saddled the mule and got the kids off to school; did a washing, mopped the floors, washed the windows and did some chores; cooked a dish of home-dried fruit, pressed her Husband's Sunday suit, swept the parlor, and made the beds. Baked a dozen loaves of bread, then split some firewood and lugged in enough to fill the kitchen wood bin. She cleaned the lamps and put in oil, stewed some apples she thought might spoil. She churned the butter, baked a cake, then exclaimed, "For heaven's sake, the calves have got out of the pen", then went out and chased them back in. She gathered the eggs and locked the stable, went back to the house and set the table. She cooked supper that was delicious and afterward washed up all the dishes. She fed the cat, and sprinkled the clothes, and mended a basketful of hose--THEN opened the organ and began to play "When We Come To The End Of A Perfect Day". Author Unknown

EGGLESS--BUTTERLESS CAKE

2 Cups Flour

1 Cup Sugar

1 1/2 teaspoons Baking Soda

1 Cup Salad Dressing (Your choice of Commercial Brand of Mayo)

1 1/4 teaspoons Baking Powder

4 Tablespoons. Cocoa

1 Cup Cold Water

Blend all the DRY ingredients well. Then add Mayonnaise that is well mixed with 1 Cup Cold Water. Bake at 350F. for 30 minutes in two (2) layer pans. Ice with a rich chocolate icing (recipe follows). <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

CHOCOLATE ICING

1 Cup Granulated Sugar

1/4 lb.. Bitter (Baking) Cake Chocolate

1/3 Lb.. Butter

1 Tablespoon Vanilla

1 Pinch of Salt

4 Tablespoons (Approx.)Cream

2 Egg Yolks

Dissolve the Sugar in Cream. Add Chocolate, Butter, and Salt. Cook very slowly until all ingredients are dissolved. (Beginners may prefer to use a Double-Boiler)(Don't forget to stir while cooking) Add beaten Egg Yolks by first pouring the hot mixture over them and then returning to saucepan. Continue to cook VERY SLOWLY--do not boil--until mixture is thick. This should take about 5 minutes. Remove from stove. Add Vanilla Essence and beat until cool enough to spread on the cake. This will ice, thickly, a two layer cake.
