HAVE A NIP WITH GRANDMA!© Vaudie E. Harrison
Back in Grandma's day, there were no markets with Liquor sections, and there were no corner Liquor Stores such as we have today.
So when Grandma needed some form of Liqueur to use in the kitchen--or if Grandpa wanted something to "nip" on when the weather was cold--she had to make it herself. This week, I'll share some ways for you to do the same. Your use of these recipes is strictly up to you. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< ALLSPICE LIQUEUR 3/4 teaspoon Allspice 1 1/2 cups Vodka or brandy ½ cup Sugar syrup Mix the Allspice into the Vodka or Brandy and allow it to steep for at least 10 days. Strain out the Allspice, and then add the Sugar Syrup and mix well. Store the mixture in a glass container and allow it to age for approx. 3-5 weeks. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< AMARETTO 2 cups Sugar 2 cups Water 2 cups Vodka 2 cups Brandy 4 teaspoons Almond extract Combine sugar and water. Bring to a boil. Reduce heat; simmer, uncovered for 10 min. Stir occasionally. Remove from heat. Stir in remaining ingredients. Pour into glass containers and seal well. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< APPLE CORDIAL 4 cups Coarsely chopped apples 2 cups Brandy 1 cup Sugar 4 Inches Stick Cinnamon (Broken in Pieces) In large screw-topped jar, combine all ingredients. cover tightly. Invert jar, let stand 24 hours. turn jar upright, let stand 24 hours. Repeat turning process until sugar dissolves. Store in cool, dark place 4-6 weeks. Strain through cheesecloth into decanter. Cover. Makes 2-1/2 cups. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< BERRY SCHNAPPS 2 cups Sugar 1 cup Water 4 cups Fresh berries (Blackberries, Boysenberries, etc.) Peel from 1 Lemon 3 cups Vodka 1 cup Sugar syrup Make sugar syrup by dissolving sugar in water over low heat. Stir frequently. Cool. Lightly crush berries with fork. Add to vodka and lemon peel. Steep at least 30 days. Strain; may add more sugar syrup at this point. Allow to age for 2-3 weeks.. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< BLACKBERRY BRANDY 4 cups Fresh blackberries 2 cups Brandy 3/4 cup Sugar 3/4 teaspoon Whole allspice 12 Whole cloves Wash fruit and drain. In gallon screw-top jar, mix fruit and remaining ingredients and cover tightly. Invert jar, let stand 24 hours. Turn jar upright, let stand 24 hours. Repeat turning process until sugar is dissolved. Store in a cool, dark place at least 2 months. Strain through cheesecloth into your choice of container. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< BLUEBERRY LIQUEUR 1 Quart Fresh or frozen blueberries ½ Cup Water 1 teaspoon Cinnamon 1 teaspoon Whole cloves Peel from 1 Lemon (Cut into Strips) 2 Cups Sugar 1 Cup Vodka Simmer blueberries, water, cinnamon, cloves, lemon peel for 25 minutes. Strain through a cheese cloth. Pour about 1 1/4 cups liquid into a sauce pan. Add sugar and simmer for 10 minutes, stirring occasionally. Refrigerate for 4 weeks. Makes approximately one pint.
