ON THE SPUR OF THE MOMENT!

All of us, at one time or another, have found ourselves in the position of having to prepare a meal for the family--and we haven't had the time to make a trip to the market.

What do we do?

Sure, we can always open the 'fridge and take out some leftovers. But, what if there are no leftovers and the only thing that you have to work with is a pound or so or ground beef and an assortment of canned goods?

There is a solution, and it can really taste good--as well as being filling and healthy.

This is a recipe that was created, in a moment of desperation, many years ago. You know, back in the times when I was a young and single man who just happened to be very, very broke--and very hungry.

However, over the years this dish has become a family favorite. It's a recipe that is a "must have" whenever my Sons come to visit. They just won't leave until I fix this dish for them--so I do!

Here's how I do it! <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

GRANDPAW'S SURPRISE (I call it that because it was such a surprise that it was so good)

1-2 Pounds Ground Beef (Ground Turkey can be substituted)

1 Box of Macaroni and Cheese Mix

1 Can Whole Kernel Corn

1 Can Sweet Peas

1 Large Can Stewed Tomatoes (Crushed)

3-4 Stalks Celery (Cut into 1/4 inch pieces)

1 Large Onion (Diced)

1 Large Bell Pepper (Seeded and Diced)

Salt and Pepper to Taste

Crumble the Ground Beef and brown in a Large, Deep frying pan. After the Beef is browned, add the Stewed Tomatoes, including the juice from the Tomatoes. Lower the heat and simmer, stirring often. Add the Whole Kernel Corn and The Sweet Peas and mix well.

Add Salt and Pepper to taste.

While the Ground Beef mixture is simmering, prepare the Macaroni and Cheese according to the directions on the package.

Add the Cut Celery, Diced Bell Pepper, and the diced Onion to the Ground Beef mixture, stir well and simmer for about 5-10 minutes more.

Drain the fat from the Ground Beef mixture and, in a large bowl, mix the Ground Beef mixture and the Macaroni and Cheese mixture together. Mix completely, and serve to your family.

NOTE: If you desire, you may add a dash or two of prepared Hot Sauce to the mixture before serving. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

This was originally an emergency meal that was prepared with whatever we happened to have at hand. However, over the years since, it has become a meal that we look forward to enjoying.
