IT'S A WAKE UP CALL!

If you're like me, morning can sometimes be a real bear! You probably know the feelings, the eyes are hard to keep open, the mouth feels like someone left an old washrag in it, and your stomach rumbles like an earthquake.

Well, there's a solution to these problems. You can do like we do around here, from time to time, when we have the time to spare. Get out the 'ole waffle iron and have some great tasting waffles.

This week, I'll give you a basic waffle recipe and some variations on the theme that will allow you to serve something different--time after time.

NOTE: This recipe and its variations can be made into pancakes or griddle cakes if you don't have a waffle iron. Another thing, you can also serve these waffles for the evening meal--we do that quite often. Makes for something different--breakfast in the evening! <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

BASIC WAFFLES

2 Cups Flour (Sifted)

3 teaspoons Baking Powder

1/2 teaspoon Salt

3 Eggs (Separated)

1 1/2 Cups Milk

5 Tablespoons Shortening (Melted)

Sift and mix all the dry ingredients together. Combine the Egg Yolks (Beaten), Milk and the melted Shortening. Add to the dry ingredients and beat together until the mixture is smooth. Beat the Egg Whites until they are stiffly beaten and fold into the batter. Pour into a hot Waffle Iron being careful not to pour in too much. Cook until brown and done. Makes approx. 6 waffles. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

VARIATIONS

APPLE: Add 1 1/2 Cups of chopped, uncooked Apples, 1/8 teaspoon Cinnamon and 1 Tablespoon Sugar to the batter before folding in the Egg Whites.

BANANA: Add 1 Tablespoon Sugar and 1 Cup of Thinly Sliced (Or Mashed) Bananas.

CHEESE: Add 1 Cup of grated Sharp Cheddar Cheese to the batter.

CHOCOLATE: Add 2 ounces (2 squares) melted chocolate and 1 Tablespoon Sugar to the batter before folding in the Egg Whites.

COCONUT: Add 1 Cup Shredded Coconut and 1 Tablespoon Sugar to the batter.

HAM: Add 1 Cup finely chopped Ham to the batter before folding in the Egg Whites.

LEMON OR ORANGE: Add 2 teaspoons of grated Lemon or Orange rind to the batter before folding in the Egg Whites.

NUT: Add 3/4 Cup finely chopped Nut Meats (Your Favorite Nut) and 1 Tablespoon Sugar to the batter before folding in the Egg Whites. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

The next time you're at a loss for something different, try one of the above waffle recipes and you're sure to please your family. For an additional touch, serve the waffles with a slab of ham or some crisp bacon along with some freshly made toast and you'll have a wonderful meal--no matter if you make it for breakfast or a different evening meal.
