A DIFFERENT KIND OF PIE!

We all know that there are very few things in this world better than freshly baked pies. No matter your favorite kind of pie, nothing beats one that has just come from the oven direct to your plate.

We all have enjoyed the standard types of pie--you know the ones that I mean, Chocolate, Apple, Peach, Lemon and, of course, many others. However, if you're like me, many times we have wished for something different. Well, this week, that's what I am going to give you.

Something different!

These recipes call for ingredients that you probably have never considered for a pie, but be assured that, strange as they may sound, they are really good pies. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

NOTE: Both of these recipes call for a pastry shell for the crusts of the pies. If you have a favorite recipe for pie pastry, use it. If you don't have such a recipe, you can use the pre-made, frozen pie pastries that are available from your local market. THREE-WAY PIE

1 Cup Fresh Cranberries (Chopped)

1 Cup Tart Apples (Peeled and Chopped) NOTE: Pippin Apples are best, but any other Tart Apple will be fine.

1/4 Cup Crushed Pineapple (Canned is fine)

1 Cup Sugar

1/8 teaspoon Salt

Pie Pastry (Enough for Top and Bottom Crust)

In a large bowl, combine the Chopped Cranberries, the Chopped Apples, the Crushed Pineapple, the Sugar and the Salt. Mix completely and allow to stand for two to three hours. This allows time for all the flavors to combine. Using a 9-inch pie pan, line the bottom of the pan with pie pastry and add the pie filling. Cover the mixture with a top layer of pie pastry. Be sure to prick the top crust with a fork to create holes for the steam to escape during baking. Bake in a preheated, very hot oven (450F) for 10 minutes. Lower the heat to moderate (350F) and bake for an additional 30-40 minutes. Makes one 9-inch pie. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

GRAPEFRUIT WONDER!

This pie might sound strange to you--until you remember that pies made from Lemons are very common! Why not Grapefruit?

1/3 Cup Cornstarch

1 1/4 Cup Sugar

1/4 teaspoon Salt

1 3/4 Cups Boiling Water

3 Egg Yolks (Lightly Beaten)

1 Tablespoon Butter (Margarine)

1/2 Cup Fresh Grapefruit Juice

1 teaspoon of Grated Grapefruit Rind

1 Pre-Baked Pastry Shell

1 Large Grapefruit (Peeled and Segmented)

Whipped Cream (As Needed)(Pre-Made is Fine)

As I type the recipes are printing. I don't make a lot of pies anymore, as I end up eating the majority of them which goes right to my waistband! But I am going to try the grapefruit pie. Sounds lu ...
