ASSORTED TREATS FOR THE FAMILY

Now that the Holidays--and the Y2K panic--is behind us, it's time to get things back to normal. By normal, I don't mean that you can't find something new and different to serve your family. There are a number of things that you can prepare--without a lot of trouble--that I'm sure will garner raves galore.

After the Holidays, we all need something quick and easy--after all, we've all spent a lot of time in the kitchen over the past few weeks. Any of the following recipes will fit the bill.

This week, I'll give you a few desserts for you family that they're sure to love. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

APPLE UPSIDE DOWN CAKE

4 Large Cooking Apples (Granny Smith or Other Semi-Tart Apples)

½ Cup Raisins (Optional)

Sugar and Cinnamon (As Needed)

Peel and slice the Apples. Put in a Buttered glass baking pie plate alternating with the Raisins (If Desired) Soak the Raisins for 5 minutes in hot water before using. Sprinkle with Sugar and Cinnamon.

CAKE RECIPE

2 Tablespoons Shortening

1/3 Cup Sugar

1 Cup Flour

1/4 teaspoon Salt

1 teaspoon Baking Powder

Milk (As Needed)

Sift together all the dry ingredients. Cut Shortening in with a knife and mix with enough Milk to make a soft dough. Spread over the Apples and Raisins and bake in a fairly hot oven (350F) for about 25 minutes or until the Apples are soft. Turn upside down on a serving plate and sprinkle with more Sugar and Cinnamon. Serve with Whipped Cream while still warm. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

The following two recipes are, not only quick and easy, but great tasting as well. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

BUTTERSCOTCH RICE CREAM

1 Cup Cooked Rice

1 Tall Can Evaporated Milk

3/4 Cup (Firmly Packed) Brown Sugar

2 Tablespoons Butter

1/4 teaspoon Vanilla

Sweet Whipped Cream (As Needed)

Mix the Cooked Rice, Evaporated Milk, Brown Sugar, and Butter and cook over moderate heat for about 10 minutes, stirring constantly. Stir in the Vanilla, and allow to cool. Serve topped with the Sweet Whipped Cream. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

This next dessert is one that seems impossible--BUT IT WORKS! Simple and quick. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

QUICK CHERRY PUDDING

1 can (1 lb., 6 oz.) Prepared Cherry Pie Filling

1 small package (Or ½ large package) White or Yellow Cake Mix

1/2 Cup (1 stick) Butter, melted

1/2 Cup Chopped Pecans or Walnuts

Place the Cherry Pie Filling in the bottom of an 8"X8" baking pan and sprinkle the dry cake mix on top of the filling. Pour the melted Butter over the Cake Mix and cover with the chopped nuts. Bake at 350F for 45 minutes. Serve hot or cold, plain or topped with Whipped Cream or your favorite Ice Cream.
