Is there really any difference?

If you grew up anywhere in the South, as I did, you were probably treated to a traditional Southern dish on a regular basis--Candied Yams. But were you really eating Yams, or were they something else?

In truth, what you were enjoying WERE NOT Yams, but were truly Sweet Potatos. Now I can hear the questions already. My Grandma always called them Yams, so what's the difference--they're Yams to me?

Well, in the U. S. they're called Yams and they're also called Sweet Potatos. Just what they are called depends on the part of the country you're from. But, nonetheless, they are all really Sweet Potatos.

What Is The Difference Between A Sweet Potato and A Yam is one web site that'll tell you the difference between a Yam and a Sweet Potato. Take a look and you'll see how different they really are.

I must tell you, however, that you will find two types of Sweet Potatos in the supermarket. One is the "Golden", or yellow and the other is the "Ruby", or "Garnet". I have found, in my opinion, that the "Ruby", or darker of the two, has the best flavor. You may disagree with me and the recipes that follow can be made with either of the two types.

Regardless of what you prefer to call them, they are great eating and I'll give you a couple of different ways to prepare them that you may not have tried before. In addition, I'll refer you to a web site where you can find a recipe for the traditional Southern Candied Yams. Correctly named or not.

HEAVENLY SWEET POTATOS WITH BANANAS

6 Medium Sweet Potatos

3 Bananas

15 Gingersnap Cookies

1 Tablespoon of Butter (Or Margarine)(More if Desired)

1 Cup of Boiling Water

Cook the Potatos (Bake or Microwave) until done. Peel the Potatos and slice into 1/4 inch thick slices. Peel and slice the Bananas into 1/4 inch thick slices. Crush the Gingersnaps into crumbs--this is easily done by placing them into a plastic bag and rolling with a rolling pin or with your hands. In a greased casserole dish, arrange alternate layers of Potatos, Ginger Snap Crumbs and Bananas. Repeat until the slices are all used or the dish is full. You can place another layer on top of the bottom one if necessary. Dot the top with Butter (Or Margarine) and add the Boiling Water. Bake, covered, in a Hot oven (400F) for about 25 minutes. Uncover and bake until the top is browned. Serves 6.
