COLD DESSERTS FOR THE HOLIDAY!

Last week I gave you a few tips on making the "perfect hamburger" on your backyard grill but I failed to give you any great ways to finish off that meal. I failed to include any dessert recipes. Well, this week, we'll correct that oversight with some wonderful frozen desserts for hot weather cookouts - in your backyard or elsewhere.

Over the upcoming weekend, we here in the United States will celebrate the Memorial Day Holiday. This holiday marks the beginning of the summer season, and is a time when many of us will be planning a cookout. If you're like me, you prefer the quiet and safety of your own backyard for your celebration and the recipes that I'll give you today are perfect for a cookout at home since your "fridge" is close by. These desserts can be transported to another location, but you'll have to do some planning ahead to keep them frozen. To solve this problem, simply put the desserts in an ice-chest along with some "Dry Ice" and they should remain frozen for a reasonable length of time.

Let's get to some recipes. Both of these desserts are refreshing on a hot summer day.


BERRY SHERBET

1 ½ Cups of Strawberries (washed and cleaned)

1/3 Cup of Sugar

A few grains of Salt

2/3 Cup of Sweetened, Condensed Milk

2 Tablespoons of Lemon Juice

2 Egg Whites (stiffly beaten)

Combine the Strawberries, Sugar and Salt and let stand for about 15 minutes. Crush the berries and force through a sieve. Blend the Milk, Lemon Juice and the Strawberries. Chill the mixture and then fold in the stiffly beaten Egg Whites. Pour the mixture into a freezing tray and freeze in the freezer. When about half frozen, scrape the mixture from the sides and bottom of the tray and beat the mixture until it is smooth but not melted. Place back into the tray and freeze until firm. Makes about 6 servings. NOTE: You can use Raspberries instead of Strawberries.


COLA MARSH SHERBET

24 Marshmallows

2 Cups of Cola Drink

1/8 Teaspoon of Salt

2 Tablespoons of Lemon Juice

Place the Marshmallows and 2 Tablespoons of the Cola into a sauce pan. Heat slowly folding over and over until the Marshmallows are about half melted. Remove from the heat and continue folding until the mixture is smooth and fluffy. Cool slightly, then add the rest of the Cola, the Salt, and the Lemon Juice. Blend thoroughly. Pour into a freezing tray and freeze until firm stirring the mixture 2 or 3 times while it is freezing. Makes 4 to 6 servings.

The Cola Marsh Sherbert sounds interesting. I'm going to have to try that one out!
