THIS WEEK IS A TREAT Over the past few weeks I've given you a number of links and recipes for main dishes and salads. Basically good old-fashioned, healthy food. I hope you've enjoyed them. This week, however, I think that it's time for you all to have a treat. So the subject will be candy. Sure, I know that you can go to any supermarket, as well as any number of other places, and buy ready-made candy of an infinite variety. But nothing beats, or even comes close to, home-made. LET'S GET STARTED! Note: All of these recipes come from the 1960's or earlier. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< IMPORTANT MESSAGE FROM GRANDMA! Grandma told me that if you close your eyes while enjoying these treats, they're not fattening. Sure they're not! <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< CHOCOLATE FUDGE An Old Fashioned Fudge With A Slightly Grainy Texture Melt 2 ½ Squares of Unsweetened Chocolate in a saucepan. Add 2 ½ Cups of Sugar, 1/4 teaspoon of Salt and 1 Cup of Evaporated Milk. Cook, stirring constantly until the Sugar is dissolved. Continue cooking until a small amount of the mixture forms a soft ball when dropped into Cold Water. (This is approx. 234 F) Remove from the heat and let stand until lukewarm (110 F) Add 2 Tablespoons of Butter and 1 Tablespoon Vanilla. Beat until thick and the mixture loses its gloss. Turn the mixture out onto waxed paper and let stand until lukewarm. Knead in 1/4 Cup of Soft Butter. Press into a buttered 8"X8"X2" pan, and when firm, cut into squares. Makes approx.1 3/4 Pounds. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< PEANUT BUTTER FUDGE No Cooking Involved Mix well the following: 3/4 Cup of Peanut Butter, ½ Cup of soft Butter or Margarine, ½ Cup of Light Corn Syrup, 1 teaspoon Vanilla, and ½ teaspoon of Salt. Gradually stir in 4 Cups of Sifted Confectioner's Sugar. Knead until smooth. Gradually add 3/4 Cup of Chopped Peanuts or your choice of other nuts. Pack the mixture into a 8"X8"X2" pan. When firm, cut into squares. Makes approx. 2 Pounds. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< RAISIN-PEANUT CLUSTERS Kids Of All Ages Love These Melt 1 Cup of Semi-Sweet Chocolate pieces (6 oz. Package) in double boiler over hot water. Add 1 Can (14 oz.) Sweetened Condensed Milk and a dash of Salt. Cook for 10 minutes or until thickened, stirring constantly. Stir in 1 Cup of Seedless Raisins and 1 Cup of Shelled, Roasted Peanuts. Drop from Tablespoon onto waxed paper, and put in the fridge until firm. Makes approx. 20 clusters.
