THE EASTER BUNNY IS COMING!

I've been watching the weather maps for the past few days and I think that we can safely say that Spring has arrived for most of the country. If they haven't already done so, where you live, soon the Crocus and Daffodils will be peeking through the ground. Robins and other songbirds will fill the air with their music. Fruit trees will soon be in bloom, and other trees will be dressed in their springtime finery of bright green.

And this coming Sunday, bright and early, The Easter Bunny will pay a visit, spreading good will and happiness everywhere. Suddenly, your yard will be dotted with brightly colored eggs and other goodies that he leaves behind. Cries of, "I found one" will echo about the yard as the kids put another treat into his or her basket.

In much of the world, Easter is considered to be a major holiday. This is not only because of the religious origins of the holiday, but also because it celebrates the beginning of Spring. I know when I was young, my family always came together in a family reunion. It was a time of reacquaintance and always an excuse for a feast.

Of course, the traditional main dish for the Easter meal was a baked ham, with side dishes of sweet potatoes, peas, and green beans. That's still the most prepared meal, even today.

In the southern part of the United States, there are many variations of the traditional Baked Ham, and one of the best that I know of is Stuffed Easter Ham (Louisiana Style) . I'm sure you'll like it.
