Did you know strawberries have been growing wild for over 2,200 years? I got this tidbit from Sally's Place (visit the link at the end of this article where you'll find some more strawberry recipes).
Which brings me to the thought of eating strawberries, juicy, red and ripe, dripping luscious juice to be savored on a summer's day. Oh, do I love them. Fixed lots of different ways.
Last time I shared my recipes for a strawberry smoothie and pie. I have some more recipes here, but first I have a question.
What's your favorite strawberry dessert?
Mine is probably strawberry shortcake, but I'll take them any way I can get them. Since most of you probably have your own favorite shortcake dessert (share, won't you?) I won't publish my favorite here, but I will share a couple of recipes I love that combine strawberries and angel food cake. They are simple recipes that take little time, but taste like a million bucks!
Strawberry Surprise
One angel food cake (store bought or make your own)
1 container of strawberries, sliced
1 large package of strawberry gelatin
2-1/2 cups hot water
1 pint of whipping cream, whipped
Dissolve gelatin in hot water. Add strawberries. Cool until syrupy. Fold in half of cream.
Break cake into pieces. Layer in a 13 x 9 pan with jello mixture.
Chill and serve in squares with the rest of the whipping cream for garnish.
You may substitute whipped topping in this recipe if you desire.
Angel Food Cake with Strawberry Frosting
One Angel Food cake (store bought or make your own)
1 small container of frozen, sugared strawberries
1 large carton of whipped topping
A few fresh strawberries
Defrost the frozen strawberries and stir into the whipped topping. Frost the Angel Food cake with the mixture. Garnish with fresh strawberries. If you don't have fresh strawberries, this is fine without. It still looks pretty.
Serve immediately.
Don't use regular whipping cream with this unless you plan to eat the entire thing right away.
