A Little Tea and Some Carrot Pineapple Bread
1 cup sugar 1 cup brown sugar 1 cup crushed, undrained pineapple 3 tsp. vanilla 3 tsp. baking soda 3 beaten eggs 3 cups flour 2 T. cinnamon 1 cup chopped nuts Mix all ingredients well (I usually just dump it all in my mixer bowl and beat until moist). Pour into two greased and floured loaf pans. Bake at 350 degrees for one hour or until done. If you're a new cook, the way to tell it's done is to insert a toothpick in the center of the bread. If it comes out clean, it's done Cool 10 minutes and remove from pans. Let continue cooling on a rack. Serve when cool. This recipe keeps well and is a nice treat when you want something sweet but still a bit healthy. Okay, I admit there's a lot of sugar in this recipe. That's probably why I love it.
