Hearty Home Cooking - Meatloaf, Potatoes, Berry Cobbler

Today I was lazy, so I just used dinner rolls from the freezer. Another time I'll give you my roll recipe.

I live in Washington State and am proud of all the bounties this state provides, including berries. I like to use small wild blackberries or blue huckleberries for cobbler, but substitute other berries if I don't happen to have any in the freezer. Today I had raspberries, blueberries and cascade blackberries from Costco, so that's what I used.

I don't have a recipe written down for this, but this is the way I make it:

Berry Cobbler

6 cups berries heated to a simmer
Pie crust for double crust pie, rolled out and cut in strips
Sugar

Heat oven to 350 degrees. Make crust as your berries simmer. Layer ingredients in a 13x9 pan in this order, about three layers deep:

Berries
Sugar
Pie crust strips

Alternate which way you put the strips for each layer - that helps the cobbler cook better. Finish with pie crust strips on the top, sprinkle with more sugar.

Bake at 350 degrees for 35-40 minutes. Serve warm or cool. I made this today after I put the potatoes on and before cooking the meatloaf.

Tip: It is necessary to warm the berries first, as that's what helps cook the layers of pastry. If you don't your pie crust may not get done.


Well, I'd better get back to the kitchen. I took time out to write this article while I was cooking, but now the kitchen beckons. It's about time to get the meat loaf on.

While I'm thinking about it: This might be a great meal for Valentine's Day. Why not treat your significant other at home instead of dinner out this year?
