Totally Tomatoes


Fried Green Tomatoes adapted from Alton Brown's I Just Came Here For the Food

  • 3 green tomatoes, baseball sized
  • ½ cup flour
  • ½ cup cornstarch
  • Kosher salt and pepper, to taste
  • Pinch of cayenne pepper
  • 3 large eggs
  • 2 cups Ritz cracker crumbs
  • Vegetable oil for frying
Slice the tomatoes into ¼ inch slices, and spread on paper towels. Put another layer of towels on top and allow the tomatoes to drain. You want them dry.

In a small or medium bowl, mix the flour, cornstarch, salt, pepper, and cayenne. In a separate small bowl, beat the eggs until they're fluffy. Put the cracker crumbs on a small plate.

Put enough vegetable oil in a skillet to come ½ inch up the side of the pan. Heat the oil to 350 degrees F.

Dip each tomato slice first in the flour mixture, then in the eggs, then pat cracker crumbs on the slice. Place the tomato slice in the oil and cook until the first side is crisp and brown. Turn the slice over, and repeat. Remove to a paper towel to drain.
