Angel Whispers

Every once in a while I get a craving for something lemony, and these cookies certainly do the trick. Try them with lemonade or ice tea for a nice, light summer treat that will melt in your mouth!

These cookies are a little bit of work, but they are so perfect when they are finished, they are worth it!

Angel Whispers

1 cup butter; 1/2 cup powdered sugar; 2 cups all-purpose flour; 1 tsp. lemon zest; 1/2 tsp. salt

Filling: 1 egg, beaten; 2/3 cup white sugar; 1-1/2 tsp. lemon zest; 3 Tbs. lemon juice; 1 Tbs. and 1-1/2 tsp. butter

In a medium bowl, cream together butter and powdered sugar until light. Stir in lemon zest, flour and salt. Cover bowl, chill for about one hour.

Preheat oven to 400 degrees. Flatten teaspoons of dough onto cookie sheets. Bake 5 to 8 minutes, until light brown. Remove from baking sheets to cool on racks.

To make filling, combine the beaten egg, sugar, lemon zest, lemon juice and butter in the top of a double broiler. Stir until thick. Sandwich cookies together with one teaspoon of filling in between.

Makes 24 servings.
