Contest Winner--Rice Krispie Cookie

I am so excited to announce the winner of the Kid's Favorite Cookie Recipe Contest. I think you will enjoy the winning entry, which comes from Jozette Aaron. The cookies are Rice Krispie Cookies, which Jozette calls "a cousin to the square." I made some for my kids, and they couldn't have been more excited!

Kids are synonymous with Rice Krispie Squares. Want a change for 2001? Try serving these cookies for an after-school- snack break. Try them yourself as a light treat. I know, I know, the diet thing, right? Well, one won't hurt - the trick is to stop at only one!

Ingredients:

1 cup margarine

1 cup oil

1 cup brown sugar

1 beaten egg

1 tsp. salt

1 tsp. soda

3 1/2 cups flour

1 cup Rice Krispies

1 cup oatmeal

1/2 coconut

1/2 cup chopped nuts (pecans, walnuts, hazelnuts - try a mix of all three)

Combine all ingredients in list order.

Roll into balls and flatten with a fork on a cookie sheet - a baking stone is even better

Bake @ 350 degrees for about 10 minutes

These cookies come out crispy, thin and delicious. They also freeze well which is good since this one recipe makes a large batch...enjoy!

I just finished baking a batch of these cookies and I added a mixture of butterscotch and chocolate chips....

The result is absolutely devine...even better than without! ...
