Nanaimo Bars

My mother used to pick these very sweet treats up from the grocery store deli case every time she went shopping and hide them from us kids. Somehow we always found them...

Nanaimo Bars

For 16 bars you will need: 2 cups graham crackers crumbs; 1 cup flaked coconut; 1/2 cup chopped walnuts; 1/2 cup butter or margarine; 1/4 cup granulated sugar; 3 Tbs. cocoa; 1 egg, beaten; 2 cups powdered sugar; 2 Tbs. hot water; 2/3 cup chocolate chips.

Tip: If desired, you may flavor the powdered sugar layer with nut- or fruit-flavored liquer, such as curaco, banana, coconut or almond.

1. Measure crumbs, coconut and nuts into bowl. Blend and set aside.

2. Heat butter and sugar in small saucepan until butter is melted. Stir in cocoa. Mixture should be smooth and sugar dissolved. Blend in egg and vanilla, mixing well.

3. Combine mixture with crumb mixture. Turn into lightly oiled (not greased) 8-inch square cake pan. Press firmly to make smooth surface. Place into freezer while preparing next layer.

4. Blend the 1/4 cup soft butter, powdered sugar, and hot water until mixture is smooth and well combined. Spread over chocolat layer, smoothing top.

5. Place chocolate chips in top of double broiler. Place over hot water, stir until melted. Spread chocolate over top. Cover and chill for 30 minutes or until chocolate is set, cut into sixteen bars.
