Healthy 1-2-3 : The Ultimate 3 Ingredient Cookbook, by Rozanne Gold.

As the summer heat continues to percolate, it's hard to imagine cooking anything at all. Or at least, anything very complicated. Rozanne Gold comes to the rescue with Healthy 1-2-3; all of the recipes are reasonably healthy (some more than others) and can't help but to be simple, with the limited number of ingredients at hand.

Beautiful photographs make this cookbook a nice coffee-table piece as well.

Carrot soup What could be easier than roasted carrots pureed with a bit of cream? I think I'd prefer maybe one or two extra ingredients (a hint of garlic wouldn't be amiss here), but delicious nonetheless.

Roasted chicken My favorite no-need-to-think food; this version is juicy and flavorful, and tastes much more complicated than it is.

I didn't try any of the desserts--if I want simple, I'll have a piece of fruit. For anything else, I want something a bit more complicated than the three ingredient restriction can permit.
