Julia's Kitchen Wisdom: Essential Techniques and Recipes From a Lifetime of Cooking

Julia's been holding out on us all these years, it appears. All along she's relied on a little notebook filled with quick tips and guidelines that she keeps in her kitchen to speed along dinner--not even the indomitable Mrs. Child can keep all those recipes filed in her head! At last, she has published this little notebook, and quite a find it is.

She specifies, and she's quite correct, that it is not for the beginner. It is for the experienced cook that can't quite recall how to do something, and is likely embarrassed about it. Instead of thumbing through all of one's cookbooks in an effort to find the guideline, you'll quite possibly find it in this slim, well-organized volume. Your own notebook, as it were.

Fans of her original show will be pleased to find photographs from same.

Trial by Fire:

Chicken Fricasee. I used to make Turkey Fricasee every year after Christmas, but haven't made it in years, nor could I remember how to, although I seemed to dimly recall that it fairly straightforward. This version was indeed good, very delicate and surprisingly light for all the butter it contains.
