The best thing about soup is that, with the exception of cream-based ones, they are rarely damaging to your waistline. A little skimming before serving, and you can quickly eradicate most of the calories from fat. And as spring arrives with the not-very-hidden threat of summer and swimsuits to quickly follow, soups seem particularly attractive.

A good choice for spring is the Garden Plot Soup, where you can take advantage of the new spring vegetables, or alter as the season changes and different vegetables become available. A pretty conglomeration of onion, celery, carrots, broccoli, green beans, it's a great way to get the meat-and-potato eaters in your family to get in some of their vegetable servings!

If it's still cold where you are, then the Winter Vegetable Soup may seem more appropriate--a little heartier with plenty of potatoes and a tomato base to give substance.

For summer, the Cool-as-a-Cucumber Soup is a winner. A refrigerator soup of cucumber, yogurt, delicately seasoned with dill and fresh chives in a base of chicken stock. For true soup lovers, try the Strawberry Soup for dessert--light, refreshing, sweet, and absolutely fat free!
