DEEP-DISH APPLE CINNAMON CRISP

I love apple desserts, particularly crisps. Something so homey and inviting about the scent of cinnamon and the casual appearance of this desset. The Barkers substitute orange zest and juice for the more usual lemon, giving a more pronounced citrus flavor, which is very welcome. My only 'objection' is in the lack of brown sugar in this recipe, an ingredient that lends a lot of appeal to the dish. For those that don't have any on hand, or just dislike it, this white-sugar recipe is a tasty alternative.
