A new coffee company for you all to enjoy has adopted the following motto: 'Empires have been built by coffee. Wars have been fought over coffee. If you don't understand why, maybe you're not drinking the right coffee....welcome to VERITAS.'

What a conversation starter!!

VERITAS is located in Bend, Oregon. Their website is full of tips and secrets for purchasing the best possible coffee bean - we love them already!!

For instance, 'Always buy certified organic coffees. Organic coffees taste better and are healthier because they do not have the heavy infusion of toxic pesticides.'

Also, 'Never buy vacuum-packed coffee. Vacuum-packing requires the coffee to sit deteriorating for a minimum of five days before after roasting before it can be vacuum-packed.'

VERITAS will also let you know facts on quantity: 'There are 45, 8oz. cups in 1 lb. of any brand of coffee.' They will recommend companies with products that they feel enhance the flavor of your cup of joe. For stainless steel coffee supplies, its Euroware at Eurowaredesign.com. Veritas really talks up the French Press method of brewing. They feel quite adamantly that the French Press is the ONLY correct method to make a perfect cup of coffee. That's a statement that I can get behind, also. So often the poor water temperature and uneven water distribution of a drip coffeepot make it next to impossible to get the best extraction from even the freshest beans.

For water filtering, they recommend Brita. VERITAS goes on to say that chlorine and lead are the biggest water contaminants. They suggest that a great cup of coffee just won't happen if you don't work with your water first. In my opinion, that's very sound advice!

You can order from VERITAS online and try some of their beans and roasts. They carry the standard pickings like beans from Sumatra, Peru, Guatmala and roasts like Vienna, espresso and Italian. They offer a few flavors including the ever popular Irish Cream, Vanilla Nut, Hazelnut and Cinnamon Spice.

So if your feeling like trying a new vendor, give VERITAS a try and let us know what you thought. Do they roast their beans with care? Are they providing prompt and friendly service? What was their packaging like? Are their beans worthy to be the cornerstone of a new empire???
