Cold Brewing

You know, we Coffee Connoisseurs talk a lot about ‘proper’ brewing techniques – good quality beans, fresh bean, good timing and properly heated fresh water. Well, here’s a new twist on me. I clicked on over to Cool Brew Coffee from the New Orleans Coffee Company and got an education on cold brewing coffee.

‘CoolBrewing is a process by which the most flavorful essence is extracted from freshly roasted coffee with absolutely NO HEAT. The coffee is brewed very slowly using only cold water. With cold water brewing, the most flavorful oils are extracted leaving behind the bitter acids. This ensures the richest possible flavor with the least bitter taste. The essence is 100% natural. CoolBrew® has no preservatives, so it must be kept refrigerated to preserve the flavor.’

What this process does is allow you to purchase the cold brewed coffee and then drink it cold or hot. ‘It allows you to make a fresh cup of hot coffee with no filters or messy grounds, and best of all, there are no bitter acids from stale coffee left in the pot’. One ounce of CoolBrew® mixed with hot water is all you need. And it has a shelf life of 90 days in your refrigerator!!! You can also use cold brewed coffee to make an assortment of treats: iced coffee, coffee sodas, coffee ice cream and cakes.

Here’s a few of the recipes recommended by CoolBrew® .

Coffee Martini

A dirty martini with some kick!

1 oz. CoolBrew®

1/2 oz. Simple Syrup (or 3/4 tbs. sugar)

1 oz. Vodka

Mix in shaker with crushed ice, strain into glass. Garnish with chocolate covered cherry

Coffee Cheese Cake

3 oz. CoolBrew®

2 8oz. packages cream cheese

1/2 cup sugar

1/2 teaspoon vanilla

2 eggs

1 ready to use graham cracker crust

Mix CoolBrew®, cream cheese, sugar and vanilla Add eggs and mix until smooth. Pour into crust and bake at 350º for 40 minutes Refrigerate overnight. Top with whipped cream and chocolate sprinkles.
