CRAB AND SALMON RAVIOLI
First you have to learn how to make your own pasta for raviol ... (OPTIONAL) You may buy an alternative ravioli at a pasta shop, it is quite inexpensive and saves alittle time.
However, there is nothing like homemade pasta and particularly this recipe. It's BRAVURA ( bold and spirited ) meaning DELICIOUS.
RAVIOLI
All purpose flour 1/3 cup chopped peeled carrot 1 -1/2 tsp. Finely chopped fresh ginger 3 ozs. Skinless salmon fillet 3 tbsp. Chilled whipping cream 1 tbsp egg white 4 oz. Fresh crabmeat 1 green onion, chopped ½ celery stalk, finely diced 2 tsp. Chopped cilantro 1-1/2 tsp fresh lemon juice 1/8 tsp.salt 1/8 tsp. Pepper 32 gyoza ( potsticker ) wrappers
VINAIGRETTE
1 CUP OLIVE OIL ¼ CUP WHITE WINE VINEGAR
