Infant Breakfasts: Thinking Outside of the Box


Good nutrition is a key component of overall health, but around our house, time in the morning is a precious commodity. The neccessary tasks of getting teeth brushed, hair combed, clothes changed, lunches prepared and, on the rarest of days, beds made often leaves just minutes for a decent breakfast. Well, a wee glimmer of hope may be found in these make-ahead AM recipes for babies and toddlers.

Fruity Muesli

1 cup wheatgerm 1 cup regular oatmeal 1 1/2 cups unsweetened apple juice 2 teaspoons lemon juice (optional) 2 pears, peeled, cored, and chopped 2 bananas, peeled and chopped 1 tablespoon maple syrup 1 1/4 cups plain yoghurt

Combine the wheatgerm, oatmeal, and apple juice, then cover and refrigerate overnight. The next morning, mix the lemon juice with the banana. Stir these into the oatmeal mixture together with the pears, maple syrup, and the yogurt. Spoon the muesli into serving bowls and add some fresh seasonal fruits. Can be blended in a food processor for young babies (Appropriate for babies 9 months and up).

Apple and Banana Muffins

1 cup all-purpose flour 1 cup wholewheat flour 1 teaspoon baking powder 3/4 teaspoon baking soda 1 teaspoon powdered cinnamon 1/2 teaspoon salt 5/8 cup vegetable oil 3/8 cup superfine sugar 2 eggs 1 1/2 cups grated apple 3 medium bananas, mashed

Sift together the flours, baking powder, baking soda, cinnamon, and salt and mix well. Beat the oil, sugar, and eggs together until well blended. Add the grated apple and bananas. Gradually add the flour mixture, beating just enough to combine all the ingredients. Pour the batter into muffin cups and bake in an oven preheated to 350 F for about 25 minutes or till well risen and golden. Cool on a wire rack. Makes about 13 muffins (Appropriate for toddlers and up).
