Flounder Stuffed with Shrimp and SausageOk I am going to try breaking from the tradition of one entry per month, and add another column this October. I have started to notice that it is getting much colder than I thought that it would anytime soon, which is good in that it keeps the heat away, but it is pretty cold in the morning, which was unexpected for me. I was thinking about the weather, and how it reminded me of certain things back home when I was growing up. One thing that the fall brought to us was, besides frost in the morning, it gets pretty cold up there, but besides that it brought winter flounder. There was 2 different types of flounder to fish for there, as well as most places on the East Coast as far as I understand it. Winter flounder and summer flounder. Although now that I think back I don't know the difference between the 2 as far as flavor goes, or if there even is any difference, I know that they looked a little different. Flounder belongs to the same fish family as sole, in fact as far as I know there isn't much difference other than the size of the fish themselves. As near as I can tell, they both taste basically the same. One difference that I have noticed myself is the fact that you can buy flounder whole, which I have never seen a whole sole offered anywhere. For this recipe I use a whole flounder, but if you desire you can just make the stuffing and stuff filets of sole, or flounder, or basically any fish for that matter. One of the reasons that I like flounder so much is because it is an interesting fish. I am sure that most of you reading this already know all about the flounder, but just in case let me give a little background. Flounder have their eyes on the top of their head, rather than one on each side. They live on the bottom of the ocean floor, so they are totally white on the bottom and camouflaged on the top so that they are difficult to see when you or any predator is looking straight down on it. The interesting part is that when the fish are first hatched, this is not what they look like at all. They look just like any other fish, with eyes on the sides of their head. Eventually through the growing process, the eyes migrate to the top of the head.
