Holiday Recipes for Diabetics

The holidays are approaching and you or someone in your family is diabetic. No problem. Here are some great tasting recipes that the entire family will enjoy.

Instant Cocoa Mix

2 cups non-fat dry milk powder

½ cup low fat non-dairy creamer

½ cup unsweetened cocoa powder

3/4 teaspoon ground cinnamon

Mix ingredients together and blend for 15 seconds. Refrigerate.

To make Cocoa, add 1/3 cup of the mix to 3/4 cup of boiling water. Stir and drink. Delicious.

Yield: 8 six ounce servings


Sugarless Christmas Pudding

1 cup of soft bread crumbs

1 cup of mashed ripe bananas

1 cup of dried fruit of your choice

1 teaspoon of mixed spices (these can be purchased pre-mixed or you can mix your own.)

1 teaspoon of vanilla extract

1 egg

1 teaspoon of baking soda

Mix all ingredients and pour into greased pan or bowl. Steam for two hours and serve.


Diabetic Cheesecake

2/3 cup of cottage cheese

1/3 cup of cold water

½ cup of blueberries (unsweetened)

3 packages of Equal®

½ teaspoon of vanilla extract

1/3 cup of hot water

1 package of unsweetened gelatin

1 teaspoon of lemon juice

Soften the gelatin in cold water and add the hot water. Blend well. Add all of the other ingredients with the exception of the blueberries. Blend until smooth. Add blueberries and chill overnight or for a minimum of 4 hours.

Yield: 4 servings.


Christmas Fruit Cookies

3/4 cup of sifted flour

½ teaspoon of baking powder

1 teaspoon of ground cinnamon

2/3 cup of brown sugar substitute

1/4 cup of walnuts (or nuts of your choice)

½ cup of peeled apple

½ cup of dried cherries (do NOT sweeten)

1/3 cup of dried peaches or apricots

1/4 cup of golden raisins

1 large egg

1 egg white

2 tablespoons of freshly squeezed orange juice

1 tablespoon of olive oil

Preheat oven to 350 degrees F. 180 degrees C. Line a 9 inch pan with waxed paper.

Mix together flour, baking powder, cinnamon, brown sugar substitute and nuts

In separate bowl, combine apples, cherries, peaches or apricots and raisins.

Add to flour mixture, using your hands to separate fruit. Make sure all fruit is coated with flour.

In measuring cup, beat egg white, egg orange juice and olive oil.

Add liquid to fruit and flour mixture.

Stir well with wooden spoon until the mixture is evenly moist and well blended.

Pour into the prepared pan and distribute evenly.

Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

Cool for 20 minutes.

Cut into 24 squares.

2 of these squares are equal to one carbohydrate and one fat.


Author's Note:

You can use 1 cup of Splenda ® in place of one cup of white sugar in regular recipes. The trick to this, is to use ½ teaspoon of baking powder for every cup of Splenda®.
