California Cabernet Sauvignon — When to Drink

A FINAL WARNING: All wines must be stored under reasonable conditions. The longer you hold your wines, the more controlled the environment must be. The ideal is 55° with no temperature fluctuations. Wines stored at slightly higher temperatures will develop more quickly, but lose some of their complexity. If you don't have a wine cellar, think about converting a closet or purchasing a wine cabinet with temperature control.
