Are California Cabernets Ageworthy?
Do all California Cabernet Sauvignons age well? Probably not. But most of them will benefit enormously; especially those in the mid to high price category. Low end Cabernets usually possess inadequate tannins and balance for cellaring.
One final thought: Remember that, while you can store most wines safely for a few months without temperature control, you must have rigorous controls for wines to be stored over a period of years. A temperature around 55 degrees is ideal, but constancy of temperature is critical.
