There's Nothing to Fear - Its Only Ganache!

Ganache is nothing more than the heating and emulsifying chocolate and cream together so it can then be poured over a cake to form a smooth chocolate surface which is then decorated. Ganaches can be done in regular chocolate or white chocolate and because of so many commercially produced “chips”(i.e. chocolate chips, butterscotch chips) you can also make a butterscotch ganache,etc. In working with ganache you want to make sure you are not overheating the chocolate and cream otherwise you get a grainy effect and not the smooth shiny “glass like” desired effect. And it is a good idea to have a crumb coating on your cake before doing your subsequent coatings of ganache. This crumb coating will give it a good basis for a smooth foundation. Your crumb coating could be some thickened ganache that is spreadable so you can give a very thin coating to just seal in your cake. Make sure this crumb coating is thin otherwise your subsequent layers will be looking lumpy and this will magnify with each accompanying layer that is poured on.
