Chocolate Curls is a wonderful garnish for cakes that can take them from great to fabulous! Granted this type of garnish requires patience and practice but your efforts will be well worth it.
I’ve heard and seen several different techniques - from a bar of chocolate being warmed slighlty and then using a vegetable peeler to “peel” curls from either the top or bottom of the bar for long curls and for shorter ones to use the sides of the bar, to melting chocolate and then spreading in a large cookie sheet until cooled and then using an icing spatula(or sometimes called an offset spatula) to make the curls. And then here’s the method most professionals are familiar with: to take the blade of a sharp knife (held at an angle) or a dough cutter (held at an angle) and to push across the pan to make your curls. Temperature is critical - you don’t want the chocolate too warm or too cool - so it takes some working with to get it to the desired temperature you need to work with.
