Traditionally thought to be of Southern origin but according to urban legend it has its roots in New York City and supposedly from the famous Waldorf Astoria Hotel. There are different variations of the legend and one of these can be found at :

It actually is a red colored devil’s food cake - its texture aptly lends itself to the name “Red Velvet”. You can use either the traditional cream cheese or another favorite white frosting would be equally complimentary. I’ve had both and it’s a matter of personal choice which one you prefer to use.
