Caramel Sticky Buns

If you prefer the sweet to the savory, how about sticky buns?

These are the darlings of coffeehouses and breakfast spots all over the states right now. Witness the popularity of the Cinnabon franchises. (I know that a Cinnabon was often the barrier between me and madness in my airport traveling days.)

Gosh, how to sum this up? Sticky buns are perfect, messy comfort. Enjoy yours.

In general, prepare sticky buns in the following way.

  • Prepare and rise a sweet yeasted dough.
  • Prepare a filling, consisting of cinnamon, sugar, butter, chopped nuts (and sometimes raisins).
  • Punch down the dough, and roll it out into flat sheet.
  • Spead the filling over the dough.
  • Roll the dough up, jelly roll style.
  • Cut the roll into rounds--these will be your buns.
  • Arrange your rolls into some sort of prepared baing dish.
  • If the recipe calls for it, pour topping into the dish.
  • Bake.
  • Invert the dish onto a surface, so that the topping at the bottom of the dish comes out on top.

Most filled breads require a little skill--you often have to roll the dough into a flat sheet, roll it around its filling, and then shape the roll. It's not difficult, but if you're a novice at handling and shaping dough (or if you're having a bad day) it can be frustrating. Don't worry--no matter what your rolls look like, they'll still taste delicious.

Clean up for sticky buns, if you are not careful, can be a mess. Here are sime tips:

  • Prepare your baking dish according to the recipe. (Duh!)
  • Follow the recipe: you do not want so much sticky that you cannot find the bun.
  • Line the dish on which you turn out the rolls with wax paper. All you'll have to do in order to clean up will be to toss the paper.
  • As you prepare the rolls, when you finish with each utensil, pan, or dish, plunge it into a sink of hot soapy water. Wash the dishes while the rolls bake.
  • If you're sharing your creation with children, have a damp washcloth handy for when they finish. Come to think of it, adults will need a little clean up too!

Finally, the recipes! I've included only those that have you prepare the dough from scratch. However, tehre are recipes out there that have you start with canned biscuit dough.
