Black Bean Soup with Smoked Ham for the Microwave

We haven't done a lot of work with microwave recipes so far, so here's one that uses canned beans and a microwave to get the soup on the table quickly.


Black Bean Soup with Smoked Ham for the Microwave

  • 1 teaspoon olive oil
  • 1 large onion, chopped (about 1 cup)
  • 2 16-ounce cans black beans, undrained
  • 1 8-ounce can tomato sauce
  • 1/2 teaspoon dried oregano leaves
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/2 cup lean smoked ham, cubed (2 ounces)

In 1-quart microwave-safe dish with lid, pour in oil and chopped onion. Microwave on high for 1 minute.

Stir in the canned black beans with their liquid, the tomato sauce, the dried oregano, and the cayenne pepper, if using. Cover and microwave on high 8 to 10 minutes or until heated through. Remove from microwave and stir in the ham.

Garnish with chopped green onions, sour cream, and salsa, if desired.
