We haven't done a lot of work with microwave recipes so far, so here's one that uses canned beans and a microwave to get the soup on the table quickly. Black Bean Soup with Smoked Ham for the Microwave
In 1-quart microwave-safe dish with lid, pour in oil and chopped onion. Microwave on high for 1 minute. Stir in the canned black beans with their liquid, the tomato sauce, the dried oregano, and the cayenne pepper, if using. Cover and microwave on high 8 to 10 minutes or until heated through. Remove from microwave and stir in the ham. Garnish with chopped green onions, sour cream, and salsa, if desired. Copyright © 2001 Richard Mann.All rights reserved.
