"The Best Baked Beans in the World" Recipe

The secret of the Famous Rollins Baked Beans recipe is the sausage. You should use ground country pork sausage. To get exactly the right taste, you need exactly the right sausage. Audition the varieties of ground pork sausage available to you. Find one that really tastes good to you—not too bland, not too spicy, but flavorful—and you'll have the best baked beans.

The Famous Rollins Baked Beans

  • 1 1/2 pounds ground pork sausage
  • 1 large (about 28 ounces) or 2 regular (about 15 ounces) cans of pork 'n' beans
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons vinegar

Directions:

  1. Fry the sausage until it is well done, breaking it into fairly small pieces, then drain off the fat.
  2. Add ketchup, brown sugar, Worcestershire sauce, and vinegar. Bring to a boil briefly.
  3. Add the beans to the sausage and mix well.
  4. Pour the mixture into your bean pot or a casserole dish and bake at 350 degrees for 50 minutes.
This recipe works extremely well when doubled or tripled. Making large batches is a good idea; these beans really go fast! One pound of sausage (per recipe) works fairly well if the sausage has a good, hearty taste. Also be careful that your pork 'n' beans brand does not use too much liquid, making your baked beans too runny.
