The Science of BakingSWEETENERS Sugar has many roles in baking other than simply providing sweetness. Sugar tenderizes, moistens and helps the baked goods brown. Just as there are many different types of flours, there are many different types of sweeteners and sugars. Examples of sweeteners include molasses, honey and fructose.
