Ingredients:
1 14-ounce can sweetened condensed milk
1/2 cup lime juice
1 tablespoon grated lime zest
1 ready-made graham cracker crust
1 cup heavy cream
1 teaspoon coconut extract
3/4 cup flaked coconut
Directions:
Whisk together the sweetened condensed milk, the lime juice and the lime zest. Pour into crust. Whip heavy cream with coconut extract until stiff. Spread over pie; sprinkle with flaked coconut and press to adhere. Chill at least 8 hours.

Double Chocolate Snack Cake
Ingredients:
1 package devil's food cake mix
1 cup white chocolate chips, divided
1/2 cup semisweet chocolate chips
Directions:
Preheat oven to 350 degrees F. Grease and flour a 13x9-inch baking pan.
Prepare cake mix as directed on package. Stir in 1/2 cup white chocolate chips and all of the semisweet chips. Pour into prepared pan. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven; sprinkle top with remaining 1/2 cup white chocolate chips. Serve warm or cool completely in pan.

Simply Delicious Cake
Ingredients:
1 18.25-ounce yellow cake mix
1 21-ounce can pie filling (my daughter chose cherry; use your favorite)
4 eggs
Frozen whipped topping, thawed
Directions:
Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan. In a large bowl, beat cake mix, pie filling and eggs; pour into prepared pan. Bake 35 to 40 minutes or until a wooden toothpick inserted into center comes out clean. Frost with whipped topping; garnish as desired. Keep stored in refrigerator.
