Little Pilgrims in the Kitchen

This Thanksgiving, why not let your kids help you prepare the feast? Not only will they feel proud when they see your guests enjoying their efforts, both you and the kids will have a good time. The recipes in this week's article are easy to prepare; however, you'll need to help the younger children.

A Turkey-Day feast just isn't complete without the rolls. This no-knead yeast roll recipe will have your house smelling scrumptious - and your kids feeling like pros. This recipe can be doubled.

Quick Dinner Rolls

Ingredients

2-1/4 teaspoons active dry yeast
1 cup warm water (110 degrees F)
1/4 cup potato flakes
2 tablespoons white sugar
1 teaspoon salt
1 egg
2 tablespoons vegetable oil
3/4 teaspoon onion powder
2-1/4 cups all-purpose flour

Directions:

In a large bowl dissolve yeast in warm water. Add potato flakes, sugar, salt, egg, vegetable oil, onion powder, and 1 cup of the flour. Beat until smooth. Stir in remaining flour. Continue stirring until smooth, scraping batter from sides of bowl.

Cover and let dough rise in warm place until doubled, about 20 to 30 minutes.

Punch down dough. Spoon dough into 12 greased muffin cups, filling each half full. Let rise until batter reaches tops of cups, or about 20 minutes.

Bake in a preheated 400 degree F oven for 15 minutes. Serve immediately.

While not a baking recipe, this fruit salad recipe is one my own 10-year-old daughter loves to prepare. She loves getting compliments on her "cooking." This recipe can be doubled or even tripled for a large crowd.

Easy Fruit Salad

Ingredients:

2/3 cup vanilla yogurt
1 tablespoon honey
1 tablespoon lemon juice
1 11-ounce can mandarin oranges, drained
1 8-ounce can pineapple chunks, drained
1 medium red apple, cored and cut into bite-sized pieces
1 cup seedless grapes

Directions:

In a medium bowl, mix the vanilla, honey and lemon juice. Gently stir in remaining ingredients. Cover and chill until ready to serve.

And now for dessert! These cookies are simple to make and really, really good to eat. If you've got kids coming to Thanksgiving dinner, these would be good to serve them. Most kids don't like pumpking pie. Have extra chocolate kisses on hand while preparing thse because they mysteriously disappear during unwrapping!

Peanut Blossoms

Ingredients:

1 14-ounce can sweetened condensed milk
2 cups biscuit mix
3/4 cup peanut butter
1 teaspoon vanilla extract
Granulated sugar
24 chocolate kisses

Directions:

Preheat oven to 375 degrees F. In large bowl, beat condensed milk and peanut butter until smooth. Add baking mix and vanilla; mix well.

Shape into 1-inch balls. Roll in granulated sugar. Place 2 inches apart on ungreased cookie sheet.
