Makes 2 to 4 servings dependent upon ones appetite
* 1 chicken * chicken stock * juice of 3 lemons * ½ cup sugar * ½ cup boiling water
Simmer chicken in chicken stock in a covered wok unril nearly tender, about 20 minutes. Remove, halve lenghtwise and place on broiler rack. Broil 4 - 5 inches from heat for 10 minutes, turn, broil another ten minutes or until golden brown. Meanwhile, mix lemon juice, sugar and boiling water in saucepan. Bring to boil, simmer 2 to 3 minutes. Remove from heat; set aside. Arrange chicken halves on platter, spoon lemon sauce over chicken. >>>>>>>>>>>>Cook's Notes: Season chicken withi salt and pepper after it has been cleaned. Set aside chicken stock and reuse for other dishes ...here in asia, we use it to flavor and to cook noodles in. Serve with flavored rice and a green salad. Being too lazy to even prepare another dish to serve with the chicken , this is just eaten with plain boiled rice and fish sauce with lemon- a dipping sauce.
