Wok Cooking: Oriental Broiled Lemon Chicken

This is a wok recipe that I bring out and tend to use when I still want to prepare something but do not have too much energy for complicated and tedious precooking preparations. I just want to throw something in a pot, have them boil and then expect something tasty , nutritious and filling come out in a small amount of time. It does show that I am not too fond of utilizing processed food by itself, and there are days when I cannot bear to order in another round pizza. I like the aroma and the taste that lemons give to chicken. Sometimes when they are too expensive here in Manila, I try to substitute its use with limes. Well it could be a good substitute but one has to adjust the recipe to counteract the limes tartness. Enjoy this style of chicken.

Broiled Oriental Lemon Chicken

Makes 2 to 4 servings dependent upon ones appetite

* 1 chicken * chicken stock * juice of 3 lemons * ½ cup sugar * ½ cup boiling water

Simmer chicken in chicken stock in a covered wok unril nearly tender, about 20 minutes. Remove, halve lenghtwise and place on broiler rack. Broil 4 - 5 inches from heat for 10 minutes, turn, broil another ten minutes or until golden brown. Meanwhile, mix lemon juice, sugar and boiling water in saucepan. Bring to boil, simmer 2 to 3 minutes. Remove from heat; set aside. Arrange chicken halves on platter, spoon lemon sauce over chicken. >>>>>>>>>>>>Cook's Notes: Season chicken withi salt and pepper after it has been cleaned. Set aside chicken stock and reuse for other dishes ...here in asia, we use it to flavor and to cook noodles in. Serve with flavored rice and a green salad. Being too lazy to even prepare another dish to serve with the chicken , this is just eaten with plain boiled rice and fish sauce with lemon- a dipping sauce.
