Light Cooking : Fruity Breakfast Rice and Indian Raita


A friend called to ask for a recipe for breakfast rice. Most filipinos if they eat rice for breakfast , fry the rice in lots of garlic and oil and serve it with some spicy processed meat like hotdog or spam. They also serve fried rice with egg sunnyside up .

My friend wanted a lighter rice recipe that she could eat for breakfast-the other ususal Filipino breakfast treat made of cooked rice is called "champorado", chocolate flavored rice with sugar and milk. This is usually served with dried fish that is called daing or tuyo in the native tongue.

She wants to start eating lighter foods for breakfast but does not like to eat bread since she thinks it will not be as filling. She prefers rice since she can skip her morning snack and her breakfast will last her up to lunch time.For her benefit am sharing a rice recipe with fruits .

Am also sharing a low fat traditional Indian dish to be used as a dip for her favorite vegetables: snack time can also be light and filling time.

Eating healthy is the correct way to go....

Fruity Breakfast Rice

2 cups cooked brown rice, heated

1 cup plain, nonfat yogurt

1 T. honey or brown sugar

1 tsp. cinnamon

1 medium apple, chopped (or use any fruit or combination of your choice)

3 T. raisins

Combine rice, yogurt, honey or brown sugar and cinnamon in a bowl,. Stir in chopped apple and raisins and reheat in saucepan. If using a microwave only reheat for a few seconds, cover the bowl and sprinkle some water on rice so it does not dry up too much and end up being tough.

Raita

1 1/2 cups plain nonfat yogurt

1 cup cucumber, finely chopped

2 tsp. fresh ginger, minced

1/8 tsp. curry powder

dash cayenne

Combine all ingredients and serve chilled.

Can be used as a dip or as a sauce for crisp, raw vegetables.

Brown rice may be bought from health food stores or at asian groceries. If not available , left over white rice may take its place.

Serve raita with radishes, chopped green peppers, crisp carrots, celery sticks..whatever one fancies. It can also be used as a sauce for a vegetable side dish to accompany a turkey sandwich perhaps.
