It is also suitable to prepare for that girl you are trying to impres by having her come over for a romantic meal- just make sure that she is a meat eater first. The fillets are boneless lean pieces cut from the ribs- a bit expensive but they are tender and there is no waste since there is little fat to remove. Make sure that the pork is cooked just right so as not to toughen it. The sauce is a simple melange of the fruit purees of apricot and mango-a combination of two fruits that go well together both in taste and in appearance. Pork Fillets in Apricot Mango Sauce two 200 grams pork fillets salt and pepper to taste 30 grams butter Apricot Mango Sauce 1 small mango chopped 1 425g can unsweetened apricot halves Using a sharp knife, cut away any fat from pork. Season with salt and pepper as desired. Heat butter in frying pan, add pork; cook over high heat turning often, until pork is lightly browned all over. Reduce eat and cook for another ten minutes, or till tender. For the sauce: Chop mango flesh, you will be needing about 3/4 cups flesh for this recipe. Drain apricots, reserve 1/2 cup juice. Combine apricots, reserved juice and mango in blender or processor, blend until smooth. Heat sauce in small saucepan without boiling, over low heat. Serve sauce warm with sliced pork. Add a green vegetable dish and some mango or apricot slices to plate to serve as a contrast to the pork. Pour some sauce over slices and the rest of the sauce is served on the side. Boiled rice would also be a good accompaniment to the dish.
