Pearl Tea Party (II) Coconut Lychee Bubble Shake

******************************* There are lots of powders and instant fruit purees available to use as fruit flavor bases. If i am only doing shakes for home consumption then i would prefer to use actual fruit purees and fresh fruits that are in season. For the fruit shakes one can be as imaginative as possible and use various fruit combos-melons, strawberry and lychee fruit shakes are a favorite single fruitflavored drink. For the combos how about a coconut-lychee combination which is a common asian flavor. Try a pomegranate with orange, lemon strawberry shake is different. The combinations are endless. Spice up your drinks with cinnamon, shredded coconut and assorted chocolate shavings.

Lychee Coconut Bubble Tea

1/4 cup chilled cooked tapioca pearls

1 cup crushed ice

1/2 cup canned lychees with syrup or use fresh lychees

3/4 cup coconut water (this is coconut water, the juice inside a young coconut, not the white coconut cream)

1 tsp. fresh lime juice

1/4 cup simple syrup

Place pearls in serving glass.

Combine all ingredients in a blender and whizz to combine till mixture is frothy and creamy.

Pour into glass and serve with thick straws.

<<<<<<< This drink can be improved by adding fresh coconut shreds into mixture before being blended. However, finding fresh or frozen coconut strips is difficult in the western world.

Cook's Notes:

Simple syrup is made by combining a cup of sugar to a cup of water. Stir over low flame till sugar is dissolved or till syrup coats lightly the back of a spoon. Longer cooking time will thicken syrup until it reaches the hard candy stage.

Coconut water is to be found in most asian foodstores-online or in real time. This juice comes in a can or packed in tetrabricks. Coconut water is clear like water and has a light flavor. In asia it is often drunk alone or combined with sugar and more water.

Tapioca pearls can also be found uncooked in asian stores. For a substitute , use jello chunks, just cut up gelatin into cubes that will fit through the straw. When making jello chunks, try using the flavor of the milkshakes that it will accompany, like using brewed coffee to make the gelatin for a coffee bubble shake. Use lemon juice to flavor the gelatin for a lemonstrawberry pearl shake.
