GadoGado-an Indonesian cooked salad

Indonesia, the fabled East Indies land of over seventeen thousand islands, is a country of infinite variety and intrigue. Their cuisine is a spicy and tasty experience. Though not as multiflavored as the equally getting popular cuisine of Thailand-it does give new eaters a different dining experience.

Gadogado is a mixture of vegetables cooked in a spicy peanut sauce-a great dish for the veggie lovers to try out. You may choose to use the sauce for other salad combinations other than this classic mix.

You may serve this with the Indonesian inspired chicken wings that was featured in a previous article.Traditionally, this is served with Sate-the famed barbecue of indonesia and malaysia.

GadoGado

Salad:

1/2 cup cooked cabbage, shredded

1/2 cup cooked carrots, sliced

1/2 cup cooked cut green beans

1/2 cup french-fried potatoes

1 tomato, sliced

1 cucumber, sliced

1 cup fried soya bean cake, sliced (optional) but this is what makes this a classic-the use of tofu in this dish

2 cooked eggs, sliced (for garnish)

Sauce:

6 T. peanut butter

1/4 tsp. garlic powder or use freshly chopped garlic (1/2 tsp.)

1 bay leaf

1 tsp. ground red pepper

1 cup water

1 tsp. sugar

1/2 cup milk

1 slice of lemon

salt to taste

Cook vegetables . Set aside and prepare sauce.

Saute garlic, bay leaf, red pepper in peanut butter. Add water, sugar and milk gradually into mixture. Add lemon slice.

Cook over low heat, stirring constantly until thickened.

Place sauce in a serving bowl.

Arrange the vegetables and soy bean slices in a platter.

Garnish with frenchfried potatoes and sliced boiled egg.

Serves 4.
