Chicken Wings with an Oriental Flavor (I)


Having just visited relatives in the United States, I have gotten acquainted with the ever popular appetizer/main dish American favorite called Chicken Wings. The original recipe names it Buffalo Chicken Wings, since it was popularized and invented in Buffalo, New York. It is commonly served with celery and bleu cheese dressing as an accompaniment.

Chicken wings are economical, great flavored and probably addicting. Here are some wing recipes that i am sharing. They will be different from the usual american style wings...(bake or fry the chicken and then toss in butter and hot sauce). Their marinades have an Asian leaning.

******* Remember to marinade the Wings long so the flavor gets through. These recipes may easily be doubled or tripled.

Teriyaki Wings

1/4 cup teriyaki sauce (any storebought kind will do)

1/4 cup butter

1/2 Cup Chinese cooking wine or any dry white wine

2 tsp. freshly minced ginger

2 tsp. brown sugar

2 cloves garlic,minced

10 cleaned, separated chicken wings

Preheat oven to 350 degrees.

Combine all ingredients escept for chicken in a saucepan. Cook over medium heat until sugar dissolves. Remove from heat and let cool.

Transfer marinade to a mixing bowl and toss wings . Make sure to coat them thoroughly. Marinate for at least two hours in the refrigerator.

Put chicken in a baking dish that has been sprayed with oil or butter. Put it in the oven.

Bake for 20-25 minutes , turning once. Chicken should be brown and cooked through.

Transfer to a serving dish.

A family-favorite marinade for all sorts of meat is the orange juice, brown sugar and mustard mix. With the addition of mango chutney, this chicken dish takes on an Asian flavor.

Chutney-Orange Juice Wings

1/4 cup mango chutney (may be bought at your supermarket in the indian or oriental section)

1 Tbsp. mustard (use what you like but i prefer Grey Poupon)

juice of half an orange.....may also use bottled orange juice

a stick of butter

10 chicken wings that have been cleaned and separated.

Preheat oven to 350 degrees.

Combine marinade in a saucepan and cook over medium flame till butter melts.

Pour into mixing bowl and toss wings in it. Make sure they are thoroughly coated.

Keep the marinated chickens in refrigerator for at least two hours.

Put into baking pan that has been lighly brushed with oil or butter.

Bake for twenty minutes or till chicken is brown and done.
