4th of July Sparkly Aperitifs!

The word aperitif is actually derived from the Latin word aperire, which means "to open." Appropriately, an aperitif is a drink that is used as an opening to a meal, and many drinks can fall into this category. Generally speaking, aromatized wines and dry sherries are considered to be proper aperitifs. However, this 4th of July, as we celebrate our country's independence, we also can celebrate our own independence in sticking to our preference for a cool, refreshing drink to open our sparkling evening.

Here are some recipes for refreshing summer drinks, perfect for a hot 4th of July. Oh, and the addition to a little Rum or Vodka will certainly add to the fun of the evening!

Sparkly Citrus Cocktail
½ c sugar
½ c water
¾ c orange juice
½ c grapefruit juice
¼ c lime juice
¼ c lemon juice
¼ c club soda
½ c ice cubes
Directions: In a small saucepan, combine sugar and water. Bring to a boil and swirl to dissolve sugar. Allow to cool. In a pitcher, combine all ingredients, mixing well. Yield: 3 servings

Cool Melon Water
2 c ripe watermelon or cantaloupe, peeled, seeded and cubed
¼ c powdered sugar
¼ to ½ c cold water
Juice of one lemon
Directions: Blend all ingredients together. Transfer to tall ice-filled glasses. Serves 6

Lime Mint Slush:
1 banana, coarsely chopped
6 mint leaves
1 t lime juice
1 c milk
¼ c ice cubes
Directions: Place al ingredients in blender and process until slushy. Serve immediately. Yield: 2 servings

Pineapple Zinger:
2 c pineapple, coarsely chopped
1 c orange juice
1 banana, coarsely chopped
¼ c milk
2 T honey
2 c ice cubes
Directions: Place all ingredients in blender and process until smooth. Serve immediately. Yield: 3 servings
