Potato Recipes for St. Patrick's Day

Wednesday is St. Patrick's Day, and the green beer and Irish whiskey will flow in bars all over the US. Most people will serve corned beef and cabbage for dinner, with Irish potatoes on the side. The appetizer isn't a big part of the Irish diet, but potatoes certainly are.

We are all aware of the Irish potato famine of the mid-18th century, when hundreds of thousands of people died of starvation due to potato crop failure. The Irish had grown potatoes for 200 hundred years previous to that, and the lower classes were completely dependant on them for survival. For some of these people, the potato was their only source of food. They were easy to grow, storage was simple, and just one acre of potatoes could feed a family for an entire year, important to the poor who owned little land. The effect of the famine was devastating to Ireland and continues to have lasting impact today.

The Irish people are resilient and strong, and in honor of St. Patrick's day and the Irish people, I have gathered up some recipes for potato appetizers, as well as some side dishes. While they are not all Irish in origin, they do reflect the versatility of the potato.
