According to Carol E. Semrad, M. D., of Columbia University, celiac disease is an inflammatory condition of the small intestine precipitated by the ingestion of wheat in individuals with certain genetic makeups. Individuals with celiac disease may experience severe symptoms such as diarrhea, weakness, and weight loss because the wheat protein gluten triggers an inflammatory reaction in the small bowel.
During research to find more profitable crops for Montana farmers, scientists at Montana State University discovered that Indian rice grass contains no gluten. Now, a group of the state's farmers hopes to provide substitutes for people who've had to give up bread and other foods made from wheat.
The farmers organized the Amazing Grains cooperative to promote Indian rice grass as a healthy, tasty alternative to other grain substitutes commonly used, including rice and potato flour. They say flour from the native grass is more flavorful in breads and muffins.
The co-op is in its early stages, but expects to enter the market in Fall 2002, initially supplying companies that serve the celiac market, then moving into marketing finished products like cookies, muffins, and mixes.
